FRIED LUMPIA
     
  Lumpia is similar to the Chinese egg roll, with a flour wrapper encasing a tasty mix of meat and vegetables.  Lumpia is usually eaten with a vinegar and garlic sauce.

Ingredients
Filling
2 tablespoons vegetable oil for sautéing
1 tablespoon finely minced garlic
1/2 cup finely minced onion
1/2 lb boiled pork, sliced into 1/8x1/8 inch squares
1/2 cups shrimp, shelled , deveined and chopped
2 cups chicken broth
4 carrots, diced
3 medium potatoes diced
1/4 pound green beans, sliced diagonally
2 cups boiled chick peas
2 tablespoons soy sauce
2 table spoons finely chopped parsley
1 cup ground roasted peanuts
  Dip
1 cup vinegar
1/8 teaspoon salt
3 cloves garlic crushed

Wrapper (available at any Asian oriental store)

 
Cooking Instructions
Heat pan and sauté garlic until brown. Add onion. When onion turns transparent, add pork, shrimps, and broth. Simmer for 20 minutes. Add carrots , potatoes, green beans , chick peas, and soy sauce.

Cook until vegetables are tender. Set Aside and cool.

On a flat surface, spread out wrappers. Put 3 tablespoons of filling on each wrapper and sprinkle with parsley and ground peanuts before sealing with a few drops of water. Deep fry in hot oil and drain on paper towel.

Dip:
Mix all ingredients together.
